Tortilla Soup:
 
2 zuchini (juliened)
2 yellow squash (julienned)
1 bunch of cilantro (only the tops are chopped up)
1 yellow onion
1 1/2 lbs. of chopped chicken
2 quarts chicken broth (or the stock you boil the chicken in)
6 cloves of garlic (pressed and crushed)
1 can of garlic and olive oil diced tomatoes
 
 
1. Boil and chop chicken.
2. Chop veggies while chicken is cooking.
3. Add all veggies. Bring all to a boil and then reduce to simmer.
4. Garnish with shredded Colby Jack and sour cream and crushed tortilla chips.
 
 
OR
add all in a crock pot on high all day. Chicken is better this way.
