2 pounds yellow squash

1 small onion, diced

1 teaspoon salt

1 tablespoon butter

2 eggs, well beaten

1 cup cheddar cheese, grated

12 saltine crackers (single)

1/2 cup milk


Wash squash and slice.  In medium saucepan, cook squash and onion in small amount salted water.  Drain and mash; cool slightly.  Stir in butter, eggs, and 2/3 cup cheese.  Crumble crackers into mixture and add milk.  Blend well.  Top with remaining cheese and/or cracker crumbs.  Bake at 350 degrees for 30 minutes. 

Serves 6-8.
