Marinated Cabbage

1 head cabbage

1 medium onion, sliced & separated

1bell pepper, sliced

1 small jar pimento peppers ( sliced style) or 1/2 pickled jalepeño, chopped


1 cup salad oil

1 cup sugar

3/4 cup white vinegar (or) 3/4 cup real lemon juice


Shred the cabbage, using a sharp butcher knife and a cutting board.  Mix the cabbage, onion, bell pepper, and pimento in a large bowl.  Bring the dressing mixture to a rolling boil.  Pour the dressing over the cabbage mixture.  Stir, cover, and refrigerate overnight.
