BAKED BEETS 

A girl at the Farmers’ Market shared this recipe with me yesterday, and I actually prepared it for lunch today. I changed it slightly, and the results were yummy!

1. Wash, peel and cube a bunch or two of beets. Place them in a covered casserole dish ( or use foil).

2. Mix 2-3 Tbsp. olive oil and 1-2 Tbsp. honey. Pour on top of the beets.

3. Bake in the oven at 400 degrees for around 45 min.

Meanwhile, wash the beet greens and slice in small pieces. About 5-7 min. before the beet roots are finished baking, pour a little olive oil in a skillet with 1-2 cloves of garlic, minced. Cook the garlic until it starts smelling flavorful, and then add the beet greens. Wilt for a few minutes, and then sprinkle with a little balsamic vinegar and lemon juice ( I used lime, and it tasted great). When the beet roots are finished baking, place on a plate on top of the cooked beet greens.
