BEETS À L’ORANGE

Place about 2 1/2 cups raw, peeled and sliced beets in a greased casserole dish. Combine 1/2 tsp. grated orange rind, 1 c. orange juice, 1 Tbsp. sugar and 1 tsp. salt. Pour over beets. Dot with 2 Tbsp. butter. Cover and bake at 425 degrees for about 45 minutes or until beets are tender.

Another option would be to use your already cooked beets and combine the orange rind, juice, sugar and salt in a saucepan; add drained beets and heat 5 minutes. Add butter and serve.
