Tortellini Primavera


Julienned squash, zuchinni, peppers, carrots- as much as you would like. I use A LOT!

Fresh basil (as much as you like)- snipped

Fresh Tomatoes- cut in 4ths

Olive Oil

1/2 tsp of turbinado sugar (regular works too)

Tortellini (I like the Central Market Organic Pumpkin Tortellini in the frozen section)

Sea Salt

Fresh Cracked Pepper

Baked Chicken


I steam all the julienned veggies in chicken broth. You can use water.

In a separate pan, I add tomatoes, olive oil, sugar, sea salt and pepper. I stew them for a few minutes.

Mix julienned vegetables and tomatoe mixture when both are tender.

Add baked chicken and cooked tortellini.

Snip fresh basil and toss.

Extra sea salt and cracked pepper to taste.

We use freshly grated parmesan cheese or asiago.
