Healthy Zucchini Bread

Preheat oven to 350 degrees.  Grease & flour bottom only of 9 x 5 bread pan.  Mix the following ingredients in small bowl: 

           1 1/2 C. white whole wheat flour (white flour works, too)

           1 t. baking soda

           1 t. salt

Then, in large bowl, blend together the following ingredients in this order:

1/3 C. oil

1/3 C. molasses

1/2 C. sugar

1 1/2 C. grated raw zucchini

2 eggs

1/3 milk

1 t. vanilla

1/4 t. nutmeg

Stir dry ingredients into zucchini mixture.  Turn into pan.  Bake at 350 degrees for 1 hour.

Freezes well.
